Nutrition never tasted so sweet. These quick prep truffles blend the nutty richness of almonds with the smooth sweet vanilla of our SoWell Protein and a touch of cocoa for a nutritious snack that’s as delicious as it is easy to make.
Ingredients
- SoWell Protein: ½ cup
- Almonds: ¼ cup finely ground
- Chia Seeds: 1 tablespoon
- Flaxseed Meal: 1 tablespoon
- Medjool Dates: 1 pitted, soaked, and mashed
- Water: 1-2 tablespoons (as needed)
- Almond Butter: 1 tablespoon
- Optional: a few drops of almond extract or vanilla stevia for added sweetness
- For the Coating: crushed almonds or coconut flakes and nsweetened cocoa powder
Directions
- Mix Dry Ingredients: In a large bowl, mix together the SoWell Protein, ground almonds, chia seeds, and flaxseed meal.
- Combine Wet Ingredients: Add the mashed medjool date and almond butter to the dry mix. Gradually add water and mix until the mixture reaches a sticky, moldable consistency.
- Shape the Truffles: Roll the mixture into balls, about the size of a walnut, and place on a parchment-lined tray. If the mixture is too sticky, lightly wet your hands with water or coat them in a bit of almond flour.
- Prepare the Coating: In a shallow dish, mix together finely crushed almonds and unsweetened cocoa powder.
- Coat the Truffles: Roll each truffle in the almond-cocoa mixture until evenly coated.
- Chill and Set: Refrigerate the truffles for at least 30 minutes to allow them to set and the flavors to meld together.
